The culinary offering at Derby Grill represents a balance between the enogastronomic roots of the Lombard region, the warmth of Executive Chef Fabio Silva’s Campanian origins, and the freshness of the constant evolution of contemporary cuisine.
It’s a synthesis of Mediterranean cuisine interpreted through seasonal ingredients selected from the region of choice. The common thread running through all the dishes at Derby Grill is the quality of the ingredients, carefully selected by Chef Fabio Silva over years of strong relationships with trusted suppliers throughout Italy. The network of culinary artisans built over time includes both small and large entities with whom we share a philosophy and work ethic, and often, family traditions.

THE MENUS OF DERBY GRILL
The Derby Grill menu revolves around two tasting menus that reflect the essence of Chef Fabio Silva and enhance regional cuisine by making it gourmet.
The Territory… According to Me is a tribute to Lombardy, which has welcomed him since his adolescence. Here, agricultural traditions are revived in the chef’s creative flair with contrasting combinations, yet without being distorted.
Journey to the Origins, on the other hand, tells the more Mediterranean dimension of Fabio, drawing on his Campanian roots through childhood memories and the scents of home, reinterpreted with sometimes exotic influences from his work experiences around the world.
The same passion and dedication can be found in the Vegetable Inspiration menu. For this entirely vegan tasting journey, Chef Fabio Silva draws from the organic garden that “Cascina Gallina” cultivates specifically for Derby Grill in the fields of Busnago. A compelling challenge that listens to the rhythms of nature.
The dishes from the tasting menus can always be chosen à la carte and are complemented by the unmissable Our Classics, where you can rediscover the recipes that have made the history of Derby Grill, such as Monzese risotto, cutlet cooked in clarified butter, ossobuco with its saffron risotto, and the finest cuts of grilled meat.
